I’m sure you’ve heard that breakfast is the most important meal of the day! This is because you are breaking your natural fast that happens while you sleep. The last time you’ve eaten is likely 13 or more hours ago and your body needs replenishment and support for the day ahead. To optimize hormone function, clarity, energy, weight management and more you want to be sure you are getting enough healthy protein, fat and carbohydrates to start your day off right! Be sure you eat before you have your coffee (or any caffeine) to maintain healthy blood sugar levels, keep cortisol levels balanced and to stave off jitters, anxiety, excess hunger, and more.

Here are a few super simple, nutritious, and delicious breakfast options to start your day off right!

Frittata Singles

Serves 4

Ingredients:

  • 12 organic pastured eggs
  • 1 ½ cups of organic raw broccoli, chopped
  • ½ cup red bell peppers, sliced
  • 1 tablespoon fresh chives, chopped (optional)
  • Bacon – Applegate Organics – 8 pieces
  • ½ teaspoon sea salt
  • ½ teaspoon pepper

Directions:

Cook up the bacon on the stove or in the oven, and crumble/cut into pieces.  Grease muffin tins with organic raw butter or organic coconut oil.  Preheat oven to 350 degrees.

Place all of the vegetables and chives in the food processor and pulse until vegetables are finely chopped, but not pureed/liquefied.  Crack eggs in a separate bowl, beat, and add vegetables and bacon.

You can also make one large frittata, rather than singles.  With a large frittata, pour in the egg, then layer the vegetables and bacon by sprinkling it on the eggs.

Pour eggs in muffin cups about 2/3 full.

Bake in the oven at 350 degrees.  Frittata singles will take about 25 minutes and one large frittata will take approximately 45 minutes.  Cook until center is solid.
